Marsha’s Fave! Creamy Sautéed PEI Lobster

Chop up cooked lobster (Tails, Claws, Knuckles) – Approx. 1.5-2 lb of lobster meat.

 

On low heat, in a fry pan, add in a generous portion of butter (4 tablespoons or more) and lobster meat and sauté until butter is mostly absorbed by lobster. If you’re fortunate enough to be making this recipe on PEI – ADL butter is amazing AND local!

 

Add in 250 ml 36% Whipping Cream (ADL)  and stir in until Cream is nearly all absorbed by lobster.

 

Salt & Pepper to taste.

 

Let it “heal” until thickened. I use this phrase”heal” in jest – this is a new phrase I learned from my friends in Georgetown, PEI! It just means “let it sit/cool” but I love using “let it heal” now in honour of all my friends in Georgetown, PEI!
